Well… let me brake it down for you:

I have created a delicious Eggless Organic Chia Seeds Banana Pancake and my kids loves it! Yeay!
Why am I making it Eggless?
Since I found out that Evelyn has allergy to eggs – we have become more or less – an eggless consumption household. We rarely buy and eat eggs in front of her now as we don’t want her to feel left out.
Though, her favourite food was scramble eggs and pancakes – I have now found a way to change this for her. I have found myself creating her favourite food – pancake, but an eggless one. With the help of Indigo Herbs, I am more and more confident now that this will be a thing of a regular Saturday and Sunday morning treats scene.
But first let’s take a look what Chia Seeds has to offer…
Health Facts:
- contain more iron than spinach – essential for the blood
- more calcium than milk, in conjunction with magnesium and phosphorus – is responsible for promoting healthy bones and teeth, muscle contraction and relaxation and cell communication.
- Rich in vitamins B1, B3 and biotin (vitamin B7) – these are all very important vitamins for the brain and work in tandem to protect the nervous system – vitamin B3 in particular is a powerful anti-oxidant for the brain.
- high amounts of zinc, copper and manganese – these essential minerals work best together and promote healthy immune function, help to fight free radicals and are vital for healthy nails and shiny hair!
- selenium supports the immune system – essential component of the thyroid
- chromium is essential for glucose metabolism and normalises glucose levels in the blood.
Here’s how you can also make some for your wonderful little buds too!

large pancakes
|
- 1 cup of organic plain flour
- 1 organic ripe banana (chopped in to small pieces)
- 1 cup of organic milk
- 1 table spoon of Indigo Herbs Organic Chia Seeds
- 1 teaspoon of organic vanilla extract
- organic butter for frying the pancakes.
Ingredients
|

- Place all ingredients into a blender, except for the coconut oil.
- Blend until you have a fairly medium-thick mix. Add more milk if the mixture is too think.
- Melt a small knob of coconut oil in a non-stick pan and turn heat down to middle heat.
- Pour half a cup of the mix onto the centre of the pan.
- Tilt the pan in a circular motion to spread out the mix out thinly.
- It will become thick and lumpy if it is just leave it in the middle of the pan.
- Wait for one side of the pancake to heat up to light-medium brown then with a spatular turn it over to cook the other side. Or for those who are a little more confident - you can just toss it in the air and flip the uncooked side down.
- Serve hot with fresh fruits and Indigo Herbs Organic Dark Maple Syrup, Organic Yacon Syrup, honey or golden syrup.
Tips: Enjoy these little nutritional powerhouses in smoothies, sprinkled on top of yoghurt or salads or add to stews and soups to thick

These look divine!!!!!!!!!!! For kids or adults! My daughter likes an egg for breakfast every single day, but she somtimes gets tummy aches and I’ve been wondering if that’s why. I’m sure she could be tempted by these instead!

I didn’t know you could make pancakes without eggs – learnt something completely new! These do look scrummy and might be an idea for the Tubblet as she doesn’t like eggs at all.

My daughter is allergic to eggs as well. It is a nightmare finding treats for her. So many things have eggs in them or are glazed with egg ( even bread rolls)

They sound really tasty – I hadn’t heard of using chia seeds as a substitute for eggs, though I have used various other substitutions.
Chia seeds is not a substitute for eggs in this case. It’s the bananas that is the substitute. Chia seeds are the added extra that makes it more yummy! 🙂 x
I tried these pancakes for lunch today. I substituted soy milk for cows milk. I really enjoyed the pancakes which I had with maple syrup.
