☆ Chocolate Popcorn Energy Bar with Indigo Herbs ☆ Review & Giveaway

is just around the corner but did you know?… March is also the National Nutrition Month as well!

I have been approach by Indigo Herbs to come up with something delicious for the month. So I have created for you not just one but two of my yummy scrummy Popcorn Energy Bars recipes!

  1. Chocolate Apricot Raisins Popcorn Energy Bars
  2. Chocolate Apple Cranberries Popcorn Energy Bars

The great thing about this is that it works very similar to homemade no-bake granola bar. This mean that all you need is a base mixture and then you can alternate the fillings how ever you want them. I’d like to introduce you two special ingredients that will make up two types of Popcorn Energy Bar.

1. Super Mushroom Nutri-Complex – Chocolate Apricot Raisins Popcorn Energy Bars

2. Reishi Mushroom Pure Powder – Chocolate Apple Cranberries Popcorn Energy Bars

 


But before we get started, let’s have a little look why these are so special…

☆ Chocolate Popcorn Energy Bar with Indigo Herbs ☆ Review & Giveaway

Now let’s get started on the Popcorn bar recipe…

Firstly, you would need the base ingredients and then we will split them into two bowls for two separate Popcorn Bar ingredients.

What you need:

  • 2 square tins baking trays
  • baking paper to the square of the tins.
  • 2 mixing bowls
  • 2 mixing wooden spoons
  • knife to chop up the dried fruits
  • colourful sprinkles to go on top (optional)

Preparations:

  • Grease both square tin trays.
  • Place the baking paper on top of each buttered tin trays.
  • Chopped bite-sized dried fruits
    • 1 cup apricot
    • 1 cup raisins
    • 1 cup apple
    • 1 cup cranberries

Base Mixture Ingredients:

  • 1  cup oats**
  • 5 cups of ready to eat popcorn
  • 1 cup cashew nuts***
  • 1/2 tsp salt
  • 1/4 cup butter
  • 1/4 cup honey
  • 1/3 cup Organic Yacon Syrup****
  • 2 cup of melted chocolate*****

How to:

  1. In a large bowl combine oats, popcorn, cashew nuts, raisins – stir and mix well together with a wooden spoon.
  2. Add in the butter, honey, yacon syrup, melted chocolate – stir and mix well together.
  3. Separate ingredients into two mixing bowls.

 

Bowl #1 – Chocolate Apricot Popcorn Energy Bars

  1. Place the chopped apricots and Super Mushroom Nutri-Complex into bowl. Stir and mix well together.
  2. Once combined, place mixture into tray #1 and spread out evenly. Give it a little push, but not too hard as you don’t really want to squash the popcorn.
  3. Refrigerated for at least 4 hours.
  4. Cut into bite size.

Bowl #2 – Chocolate Apple Cranberries Popcorn Energy Bars

  1. Place the chopped apple, cranberries, Reishi Mushroom Pure Powder into bowl. Stir and mix well together.
  2. Once combined, place the mixture into tray #2 and spread out evenly. Give it a little push, but not too hard as you don’t really want to squash the popcorn.

Tips:
*Any dried fruits will work.
**I enjoyed Gluten-Free Oats.
***Any nuts will work also. Try peanuts, sunflower seeds or walnuts!
****You can also use Organic Dark Maple Syrup, or golden syrup too.
*****You can always put more chocolate or a cup of coconut oil in it if you wanted a more solid bar than soft bars versions.

Our Verdict!

I’m so pleased how these have turned out. Both of my kids love these little rich delicates and really enjoyed them. I also packed these out on our tresure hunt walks over Half-term and Ethan’s school packed lunch too.
